Balsamic Chicken with Spinach salad

Ingredients
- 3 Tbs. olive oil
- 4 6oz. chicken breasts
- salt and pepper to taste
- 2 Tbs. balsamic vinegar
- 2 scallions, thinly sliced
- 1 green apple, cut into small pieces
- 1 stalk celery, thinly sliced
- 2 Tbs. fresh lemon juice
- 1 15oz. can lentils
- 2 C. baby spinch, chopped
- 1/2 C. flat leaf parsley, chopped

Preparation
Step 1
Heat 1 Tbs. oil in large skillet over med. heat. Season chicken with 1/2 tsp. each salt and pepper and cook until golden brown and cooked through. Remove form heat and add vinegar; turn chicken to coat. Meanwhile, in a large bowl, toss scallions, apple, celery, lemon juice, remaining oil, salt and pepper. Fold in lentils, spinach, and parsley.
