Ingredients
- 1 Deep Dish Pie Crust
- 2 qts strawberries, cleaned and halved
- 1 cup Sugar
- 2 TableSpoon Cornstarch
- 1 cup boiling water
- 1 pkg 3 oz. Strawberry Jello

Preparation
Step 1
Combine sugar and cornstarch until well blended. (no lumps)
Gelatin Filling: In small saucepan, combine sugar & cornstarch mixture with 1 cup boiling water. Cook over medium high heat until slow boil and mixture thickens and turns clear. Cook at that slow boil for approx 3 min until mixture is bubbly and thick ~ make sure it does scorch. Remove from heat and add Strawberry Jello, stirring until smooth. Let mixture cool to room temperature.
Bake thawed pie crust (make lots of fork pokes!)as directed and cool.
Once the crust and the cooked gelatin filling are cooled, place strawberries into pie crust to adequately fill crust. Pour cooled gelatin filling equally over berries making sure to not overfill (sometime there is left-over!) Place in refrig for 3 hrs min to adequately set. Serve with desired whipped dairy topping.
