BLUEBERRY COFFEE CAKE

- BATTER:
- 3/4 C SUGAR
- 2 1/2 TSP BAKING POWDER
- 1/2 TSP SALT
- 1/2 TSP CINNAMON
- 1/4 C BUTTER
- 1 EGG
- 1/2 C MILK
- 2 C FLOUR
- 2 C BLUEBERRIES
- TOPPING:
- 3/4 C SUGAR
- 1/2 C FLOUR
- 1/2 TSP CINNAMON
- 1/4 C MELTED BUTTER

Preparation
Step 1
1. RINSE BLUEBERRIES AND REMOVE LEAVES AND STEMS.
2. COMBINE THE SUGAR, BAKING POWDER, SALT AND CINNAMON IN A BOWL AND MIX WELL.
3. ADD SOFT BUTTER AND EGG AND USING A MIXER, MIX IT UP.
4. ADD MILK AND MIX IT UP.
5. WHILE MIXING, STIR IN THE FLOUR. IT WILL END UP LIKE VERY THICK PANCAKE BATTER. YOU MAY HAVE TO FINISH MIXING BY HAND.
6. ADD THE BLUEBERRIES AND MIX BLUEBERRIES AND GENTLY MIX IT. YOU DON'T WANT TO CRUSH THE BERRIES, BUT IT WON'T MATTER IF SOME GET CRUSHED, EITHER.
7. PREHEAT OVEN TO 350 DEGREES
8. GREASE AND FLOUR A 13 X 9 PAN, FILL THE PAN HALF FULL.
TOPPING:
COMBINE SUGAR, FLOUR, CINNAMON AND MELTED BUTTER. SPRINKLE TOPPING OVER BATTER.
BAKE CAKE FOR 45 MINUTES.
REMOVE CAKE FROM OVEN WHEN GOLDEN BROWN.
