Ingredients

  • Buffalo Chicken

  • 2

    T. butter or coconut oil

  • 2

    boneless, skinless chicken breasts, cubed

  • 3

    green onions, chopped

  • 2

    cloves of garlic, minced

  • salt and pepper

  • 1/2

    cup Frank's Original Hot Sauce

  • Slaw

  • 1

    large cucumber, peeled and sliced with veggie peeler

  • 1

    medium carrot, shredded

  • 2

    green onions, sliced

  • Juice of one lemon

  • salt and pepper

  • Optional

  • Blue cheese crumbles for topping

Directions

In a large pan heat butter or oil. Saute onions on medium-high heat for about 1 minute. Add garlic and chicken. Season with salt and pepper. Cook (stirring occassionally) until chicken is browned. Add hot sauce and stir to coat chicken. To make slaw, mix all ingredients. Place slaw on plate, top with chicken and blue cheese crumbles (optional).
