I used to pick the strawberries with my kids and father-in-law, then make the jam with my mother-in-law. Great memories :)
- 8 c washed, hulled strawberries
- 8 c sugar
- 1/2 c lemon juice
Place berries and sugar in alternate layers in bowl or preserving kettle. Let stand 2-3 hours. Bring to a boil and boil uncovered 5 minutes. Add lemon juice and boil to jam stage (about another 5 minutes). Remove from heat and skim. Stir for another 5 minutes to prevent fruit from floating. Pour into hot sterilized jars. Cool slightly and seal.
