Lemon Sponge Cake with Raspberry Coulis
A beautiful and dainty cake for a special occassion.
- 1 cup sugar
- 1/3 cup flour
- 1/4 tsp salt
- 1 1/2 tbsp lemon rind
- 1/3 cup lemon juice
- 3 eggs yolks (beaten)
- 1 (385 ml can) carnation milk
- 3 egg whites
Preparation time 35mins
Cooking time 80mins
Preheat 350 degree - Bake 40 - 45 minutes
Beat egg whites until stiff and FOLD into the other ingredients. Pour into greased 8" baking dish.
Place in a ‘Bain Marie'. Bake 40 - 45 minutes or until top become golden.
Serve with Raspberry or Strawberry coulis
