Black Bean & Couscous Salad

Ingredients
- 1 Cup Couscous, prepared as instructed
- 1 can Black beans
- 1 cup thawed frozen corn (or canned corn)
- 4 green onions, sliced
- 1 Red bell pepper, diced
- 1 jalepeno, finely chopped
- 1/4 cup cilantro, chopped
- Dressing
- 3 TBSP EVOO
- 3 TBSP Lime Juice
- 4 TBSP Red wine vinegar
- 1 tsp Cumin
- Salt and pepper to taste
Details
Servings 8
Preparation
Step 1
In a large bowl, combine couscous, beans, corn, onion, peppers and cilantro.
In a small bowl, combine all dressing ingredients and whisk until completely combined.
Pour dressing over couscous mixture and stir well.
Chill and serve.
