  • 1 cup elbow macaroni
  • 6 tbsp butter
  • 3 tbsp all purpose flour
  • 1 tbsp dry mustard
  • 3 cups milk
  • 1 bay leaf
  • 1/2 cup finely diced yellow onion
  • 1/2 tsp paprika
  • 1 large egg
  • 12 oz sharp cheddar, shredded
  • 1 tsp kosher salt
  • freshly ground black pepper
  • 1 cup Panko bread crumbs

Step 1

Preheat oven to 350º. In a large pot of boiling, salted water, cook macaroni al dente. While pasta cooks, melt 3 tbsp of butter in pan. Whisk in flour and mustard. Keep it moving for 5 minutes - be sure it's free of lumps. Stir in milk, onions, bay leaf and paprika. Simmer 10 minutes; remove bay leaf.
