  • 1 medium-size lemon, well scrubbed and wiped dry
  • 1/2 cup unsalted butter or margarine, at room temperature
  • 1 cup plus 4 tsp grated granulated sugar
  • 4 large eggs
  • 1 tsp baking soda
  • 2 cups all-purpose flour
  • 1 cup plain buttermilk or yogurt
  • 3/4 cup( 5 oz) semisweet chocolate chips
  • 1/4 cup fresh lemon juice

Step 1

heat oven to 375. line muffin tins with paper baking cups. finely grate the lemon peel, avoiding as much of the white pith as possible. beat butter and 1 cup sugar in a medium-size bowl with electric mixer until pale and creamy. add eggs, one at a time, beating well after each. stir in baking soda and grated peel. fold in half the flour, then half the buttermilk, repeat, then fold in chocolate chips. spoon 1/4 cup batter into prepared muffin cups.

bake 20-25 minutes. remove from oven. brush lemon juice over hot muffins until used up. sprinkle with remaining 4 tsp sugar.
