Ingredients

  • 3/4 cup semisweet chocolate chips
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 4 large eggs
  • 1 cup butter or margarine, melted
  • 1 cup solid-pack canned pumpkin
  • 2-3 tablespoons heavy cream or milk
  • 1 1/4 cup confectioners sugar

Preparation

Step 1

heat oven to 350. grease 9 x 5 x 3 inch loaf pan.

stir in 1/2 cup chocolate chips in small, heavy saucepan over very low heat until melted and smooth. remove from heat; set aside.

stir flour. granulated sugar, baking powder, ginger cinnamon and salt in large bowl to mix well.

beat eggs, melted butter and pumpkin in second bowl with wire whisk or fork, when thoroughly blended, stir into flour mixture until just mixed.

pour half of batter into clean bowl, stir in melted chocolate to blend well. spoon plain and chocolate batters alternately into prepared pan, run thin spatula or knife at random through through batter to produce marbled effect.

bake 1 hour 15 minutes. cool

meanwhile, stir remaining 1/4 cup chocolate chips in small heavy saucepan over very low heat until melted and smooth. remove from heat, set aside.

stir cream into confectioners sugar insmall bowl until smooth, stir in food coloring to desired shade of orange.

drizzle melted chocolate from tip of spoon in random lines over top of cooled loaf, drizzle icing from clean spoon in random lines over chocolate.

let stand 15 minutes to set glaze.

makes one 9 -inch loaf.
