Potato Puff

A nice change from mashed potatoes that can be prepared a couple of hours ahead, put into muffin tins and refrigerated, then baked just before dinner. The quantities may be adjusted to suit numbers.

Ingredients
- 2 cups mashed potatoes
- 2 Tablespoons butter
- 1 cup milk
- 2 eggs
- salt and pepper

Preparation
Step 1
Mix all ingredients except eggs with potatoes. Beat eggs and then stir in lightly.
Bake in buttered muffin tins until well puffed and golden brown, about 35 minutes at 375 degrees. (Allow another 15 minutes if previously refrigerated).
Allow 1 large puff or 2 small ones per serving.
Yield 4 large or 8 small puffs
