Caramelized Veal Breast or Turkey Roast

Ingredients

  • 4-6 lb veal roast
  • onion powder
  • garlic powder
  • salt
  • paprika
  • 1 clove garlic,crushed
  • 1/2 cup sherry cooking wine
  • 2 Tbs soy sauce
  • 1/2 cup packed brown sugar
  • 4 tsp yellow mustard

Preparation

Step 1

Preheat oven to 350. Rinse the meat and pat dry. Place in a 9x13" pan . Season lightly with spices. Smear garlic over the roast. Pour sherry and soy sauce over the roast. Cover tightly with foil and bake for 2 1/2-3 hrs.
Remove roast from oven. Preheat oven to broil. Remove foil and cut shallow slits, 1" apart,across the top of the roast. Combine brown sugar and mustard in a small bowl and spread over the roast. Broil 3-5 min,until brown sugar mixture begins to bubble and caramelize. Remove from oven. Allow to cool and then slice.
