Ingredients

  • Frosting:
  • 2 Cups Sugar
  • 1 Cup Oil
  • 3 Eggs
  • 2 Cups Flour
  • 2 Cups Zucchini, grated
  • 1 tsp. Salt
  • 1/4 tsp. Baking Powder
  • 2 tsp. Baking Soda
  • 3/4 Cup Oatmeal
  • 1 tsp. Vanilla
  • 1 Cup Pecans, chopped
  • 1/2 cup Butter
  • 8 oz. Cream Cheese
  • 1/4 tsp. Almond Extract
  • 1 tsp. Vanilla
  • 2 1/2 Cups Powdered Sugar

Preparation

Step 1

In a large bowl, combine sugar, oil, eggs, flour, zucchini and vanilla; mix well. Add salt, baking powder, baking soda and oatmeal. Mix until well blended. Fold in nuts. Spoon into a greased 10 x 15 inch pan and bake at 350 degrees for 30 minutes. Frosting: Cream together butter and cream cheese. Add vanilla and almond extract. Add powdered sugar and mix until smooth and creamy. Spread on cake and cut into bars.
