Ingredients
- 1 pound fresh tuna steak, cut into cubes
- 1/2 cup panko bread crumbs
- 1 egg, lightly beaten
- 4 scallions, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 1 teaspoon toasted sesame oil
- 2 tablespoons olive oil

Step 1
Place tuna in a food processor, and pulse for a couple of seconds, until it has the consistency of ground meat. Transfer to a medium bowl, and combine with bread crumbs, egg, scallions, soy sauce, ginger, and sesame oil. Shape the tuna mixture into 6 to 8 small patties. Refrigerate for 20 minutes.
Heat the olive oil in a large skillet over medium-high heat. Cook patties (in batches if necessary; you don't want to overcrowd the pan) about 2 to 3 minutes on each side.
