  • 1 Head of cauliflower, broken into florets
  • sea salt
  • 2 eggs, beaten with 2 tablespoons of milk
  • flour
  • olive oil for frying
  • Grated parmigiana cheese for garnish

Step 1

Soak cauliflower florets in sea salted water for 15 minutes. Steam them for 10 minutes and run under cold water. Pat dry. Dip in egg mixture and then in flour. Fry in 1 inch of oil until lightly browned. drain on paper towels and top with parmigiana cheese.
