    Mackerel Patties

    My family prefers mackerel patties instead of salmon patties. These are really good.

    Put mackerel (liquid and all) in bowl. Add egg, flour and 1/4 cup cornmeal. Stick your hand right in the middle of it and mix :) Add a little bit more meal at a time until it gets to where you can make patties. Put about 1/2 inch of oil in skillet and heat. Place patties in hot oil and brown, flip and brown other side. My family likes this served with soupy potatoes (sliced, boiled in water, salt and pepper adding butter the last couple minutes of cooking), buttered green peas and fried cornbread.
