Ingredients

  • 3 large baking potatoes, peeled and diced
  • 1 large onion, diced
  • 2-3 stalks of celery, diced
  • salt and pepper to taste
  • 1/2 can (large) of evaporated milk
  • 1/2 stick margarine (optional)

Preparation

Step 1

Cover potatoes, onions, celery, with water. Add salt and pepper. Simmer, uncovered for about 45 minutes or until potatoes are soft.

Remove from heat. Mash potatoes while in water, leaving some chunky.

Add milk and margarine and stir until margarine melts.

To reheat, do not boil, just warm or use microwave.
