Wild Blueberry-Oat Muffins

Ingredients

  • 1 cup old fashioned oatmeal
  • 1 cup 2% milk
  • 1/2 cup firmly packed brown sugar
  • 1/3 cup vegetable oil
  • 1 tbsp. orange zest
  • 1 egg
  • 1 cup flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/2 cup chopped pecans
  • 1 1/2 cups frozen wild blueberries
  • 3 tbsp. icing sugar

Preparation

Step 1

Oven 425.
Line 12 muffin tins with paper liners.
In large bowl, stir together oats and milk; let stand for 10 minutes.
Add sugar, oil, orange-zest and egg, stirring well.
In medium bowl, stir together flour, baking powder, baking soda and cinnamon. Add pecans, tossing well. Add flour mixture into oatmeal mixture, stirring until just combined.
Gently, but quickly, fold in 1 cup frozen blueberries.
spoon batter into prepared muffin cups.
Sprinkle with remaining /12 cup blueberries.
Bake 29 min. or until golden brown.
Remove from pan and cool completely on a wire rack
Sprinkle with icing sugar.
