Ingredients

  • Shrimp:

  • ½

    lb. medium shrimp (peeled)

  • cup Newman's own lite Italian dressing

  • Noodles:

  • 2

    tbsp spoon of chunky peanut butter

  • 1

    tbsp soy sauce

  • 1

    tbsp honey

  • 1

    tsp grated ginger root

  • ¼

    tsp cracked red pepper

  • cup Newman's own lite Italian dressing

  • 8 oz. pkg of angel hair pasta

  • 1

    tbsp canola oil

  • 1

    tbsp sesame oil

  • 1

    medium carrot (shredded)

  • 1

    cup chopped green onions

  • ¼

    cup fresh cilantro

Directions

Mix dressing and shrimp together in a bowl. Cover and marinate in refrigerator for one hour. Cook pasta and set aside. Mix peanut butter ingredients. Add oil and shredded carrots to a saute pan. Cook one minute. Drain shrimp and discard dressing. Add shrimp to carrot mixture. Ass chopped green onions and cook for 3 minutes. Toss hot pasta with dressing mix and shrimp mix. Garnish with cilantro.
