Raspberry Crumble Bars

Ingredients

  • 1 c flour
  • 1/3 c packed light brown sugar
  • 1/4 c rolled oats
  • 1/2 c unsalted butter, melted
  • 2 T finely chopped walnuts
  • 1 10 oz jar raspberry jam
  • 1/3 c bittersweet chocolate chips, chopped

Step 1

Preheat oven to 350. Cover an 8x8-in baking pan with foil, letting 3 in hang over the sides.

In a med bowl, combine flour, brown sugar and rolled oats. Add melted butter and stir with a fork to combine. Remove 1 1/2 c of mixture and pat into bottom of prepared pan and 1/4 in up the sides. Bake for about 10 mins.

Meanwhile, mix walnuts into excess oat mixture, set aside.

Spread raspberry jam over the crust leaving a 1/2 in border around the outside. Sprinkle chocolate over the top, then add remaining crust mixture in an even layer.

Bake 20 mins, then let cool completely in the pan. Use the foil to life the bar up and out of the pan. Chill for 1 hr, then cut into 24 bars.
