Ingredients

  • Dressing:
  • 8 medium zucchini, julienned on a mandolin, box grater or food processor
  • 1-2 lb broccoli, roasted
  • 2 red onions, diced
  • 1 cup dry cured olives, chopped
  • 1 cup walnuts, toasted and chopped
  • 3 Tbsp Apple Cider Vinegar
  • 1 1/2 Tbsp white vinegar
  • 1/4 cup EVOO
  • 1 garlic clove, minced or crushed
  • 1 tsp dry oregano
  • salt and pepper to taste
  • 2 Tbsp lemon juice
  • 1 shallot, diced fine

Preparation

Step 1

1. Roast the broccoli at 350 degrees for 15-20 minutes, cool.

2. Julienne the zucchini into slaw, on the mandolin and add to large bowl. Dice the onions. Remove pits from olives and chop. Chop the walnuts. Add everything to the bowl. Add the broccoli to the bowl and mix.

3. Make the dressing. Add all of the ingredients in a separate bowl and whisk until emulsified. Pour dressing on the salad and mix well. Let sit for awhile for flavors to meld.
