Ingredients

  • 3 c uncooked rigatoni
  • 1 pkg(10oz) frozen creamed spinach
  • I can (14oz) water packed artichoke hearts, rinsed, drained, and quartered
  • 2 c (8oz) shredded part skim milk mozzarella cheese, divided
  • 1/4 c grated Parmensan cheese
  • 1/2 t salt
  • 1/4 t pepper

Preparation

Step 1

Preheat broiler. Prepare rigatoni and spinach according to package directions.

Drain pasta, reserve 1/2 c pasta water and return to pan. Stir in artichokes, 1/2 c mozzarella cheee, Parmesan, salt and pepper, and cooked spinach, adding some reserved pasta water to thin, if desired.

Transfer to a greased 2 qt broiler safe baking dish, top with remaining mozzarella. Broil 4-6 inches from heat 2 min or until cheese is melted.
