Spinach Quiche Muffins


This is a copycat of the quiche muffins from Paradise Bakery

  • 1 pkg frozen chopped spinach
  • 1/2 cup egg beaters
  • 2 eggs
  • 1 cup skim milk
  • 2 cup shredded low fat cheese
  • 1/4 cup flour
  • 1 tsp nutmeg



Step 1

Thaw spinach and drain. Mix flour with milk and add to egg beaters and eggs. Add spinach, cheese and nutmeg. Bake at 350 degrees for 30 minutes or until firm.
