Broccoli Cheese Soup

Ingredients
- 1 tblsp melted butter
- 1/2 med. chopped onion
- 1/4 cup melted butter
- 1/4 cup flour
- 2 cups Half & Half cream
- 2 cups chicken stock
- 1/2 lb. fresh broccoli
- 1 cup carrots, julienned
- 1/4 tsp nutmeg
- 8 oz. grated sharp cheddar cheese
- salt & pepper

Preparation
Step 1
Saute' onion in 1 tblsp. melted butter, set aside.
Cook melted butter and flour using a whisk over med. heat for 3 to 5 min. Stir constantly and add the half & half. Add chicken stock, simmer for 20 min.
Add broccoli, carrots and onions. Cook over low heat 20 to 25 min.
Add salt & pepper to taste, can be pureed in blender(optional) Return to heat and add cheese. Stir in nutmeg.
