Ingredients
- 1 1/2 c. water
- 2 T. lemon juice
- 1 1/2 pounds cod fillets
- 1 small onion, finely chopped
- 2 large tomatoes, sliced
- 1/2 c. chopped green pepper
- 1/2 c. seasoned bread crumbs
- 1/4 c. grated parmesan cheese
- 1/2 t. dried basil
- 1 T. vegetable oil

Preparation
Step 1
In a bowl,combine the water and lemon juice. Add fish, soak for 5 minutes.
Drain and place fish in an 11 X 7 X 2 baking dish coated with nonstick
cooking spray. Sprinkle with pepper. Layer with oion, tomatoes and green
pepper. Combine the remaining ingredients; sprinkle over top. Bake,
uncovered at 375 degrees for 20-30 minutes or until fish flakes easily with
a fork. Yields 6 servings. 158 cals. 4 gm fat, trace fiber.
