Bacon-Cheese Corn Muffins

These corn muffins have a little kick, but not too much my son loves them. They are great with soups and stews.

Ingredients

  • 8 strips bacon
  • 1 egg
  • 1 cup milk
  • 1/4 cup butter melted
  • 1 can creamed corn
  • 1 cup yellow cornmeal
  • 1 cup flour
  • 3 tablespoons sugar
  • 3 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon hot sauce
  • 1 1/2 cups grated cheddar cheese

Step 1

Preheat oven to 400 degrees. Grease a 12 cup muffin pan. Cut bacon into small pieces cook until crisp, drain. Whisk together egg, milk, and melted butter. Add creamed corn, cornmeal, flour, sugar, baking powder, and salt and stir to combine. Fold in hot sauce, cheese, and bacon bits. Spoon batter into muffin cups. Bake for 20-25 minutes or until tops are lightly browned. Makes 12 muffins.
