Salmon Cakes with Lime Sauce

These are so wonderful! My kids like them without the sauce, I love them with the sauce!
- Lime Sauce:
- 2 cans Salmon or Jack Mackerel
- 1 lime
- 1 Tbsp dried Parsley
- 3/4 c bread crumbs
- 1/2 c mayonnaise
- 1 egg
- 1/2 tsp onion powder
- 1/4 c sour cream
- 1/2 c mayo
- 2 tsp sugar
- zest and juice of lime
- vegetable oil for frying
Buttermilk Ice Cream

- 1 C. sugar
- 1 C. water
- 2 C. raw buttermilk
- 1 C. raw heavy cream
- Juice of 1 lemon
- 1 Tbl. corn syrup
- Zest of 1 lemon
Weeknight Taco Salad

- 5 flour tortillas (8 inch)
- 1 lb. ground beef
- 1 pkt. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
- 4 cups shredded lettuce
- 1 1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese
- 1-2 large tomatoes, chopped
- 1/2 cup KRAFT Ranch Dressing

This is a really easy way to make a fruity, cobbler-type dessert
- 1 20 oz can crushed pineapple
- 1 21 oz can cherry pie filling
- 1 box yellow cake mix
- 2 sticks butter
Easy Pressure Cooker Paella

This is not actual Paella, but a much simpler version with some of the same ingredients
- 1 large package saffron rice mix
- 3 cups water (or per directions on rice) or chicken bullion
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- 1 Tbsp dried minced onion
- 16 ooz bag frozen mixed veggies
- leftover beef and/or chicken, cubed
Velveeta Tuna Noodle Casserole

This is from the Kraft website, with my modifications
- 2 cups medium-size pasta, uncooked
- 1 pkg. (16 oz.) frozen mixed vegetables, thawed, drained
- 1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
- 2 cans (5 oz. each) tuna in water, drained, flaked
- 1/2 cup milk
- 2.8 oz can French's fried onions (optional)
Cajun Black Bean Soup with Lime

This is a completely vegetarian meal with no added oils or fats
- 1 onion, chopped
- 1 tsp minced garlic
- 2 tsp chili powder
- 1 tsp cumin
- 3 cups vegetable broth
- 2 cans black beans (BPA free), drained and rinsed
- 1/2 cup salsa (our favorite is Newman’s Own Pineapple)
- 1 lime
- Shakin’ Jamaican Seasoning to taste

- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms (optional)
- 2 cups Cheddar cheese, grated
- 1 (26-oz.) jar pasta or spaghetti sauce
- 8 flour tortillas

In a large bowl mix all ingredients except ranch
- 8 c Chex cereal of choice
- 2 1/2 c pretzels
- 2 1/2 c cheddar crackers like Cheezits
- 3 Tbsp oil
- 1 pkg ranch dressing mix
Slow-Cooker Refried Beans

Rinse the beans, and then toss everything in the slow cooker (a very big slow cooker!)
- 6 cups dry beans (I like to use 31/2 cups pinto
- and 21/2 cups black beans)
- 2 tablespoons canned green chilies
- 2 tablespoons salt
- 2 teaspoons pepper
- 2 tablespoons minced onion
- Lots of garlic (probably a tablespoon)
- 1 teaspoon cumin
- 15 cups hot water
