Combine dressing ingredients in small bowl
- Dressing:
- 1 Tbsp orange juice
- 1 1/2 tsp lemon juice
- 1 1/2 tsp soy sauce
- 1/8 tsp coriander
- 1/2 tsp ginger
- 1 tsp honey
- 1 1/2 Tbsp oil
- Salad:
- 1/4 lb green beans
- 3 small tomatoes (1 pound)
- chopped romaine lettuce
Crispy Santa Fe Chicken

This recipe is from the Kraft website, and I made some modifications
- 4 small boneless skinless chicken breast halves (1 lb.) pound these into flattened breasts
- 1 egg, beaten
- 12 PREMIUM Saltine Crackers, finely crushed (about 1/2 cup), or use Ritz type or butter crackers
- 4 Tbsp. butter, melted
- 1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
- 1 cup KRAFT Mexican Style Finely Shredded Four Cheese

- 2 cups all-purpose enriched unbleached flour
- 1 cup oatmeal
- 1 teaspoon yeast
- 1 teaspoon salt
- 1/8 cup sugar
- 1 cup warm milk

- 1/4 - 1/2 cup lukewarm water

Turkey Salad With Tomato, Avocado, and Parmesan

From Real Simple
- 1 large head green leaf lettuce, torn into pieces (about 6 cups)
- 1/2 pound thinly sliced deli turkey
- 2 large tomatoes, cut into wedges
- 1 avocado, cut into bite-size pieces
- 1/2 red onion, thinly sliced
- 1/2 cup shaved Parmesan (2 ounces)
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- kosher salt and pepper

This is a nice casserole. It should be made about 8-12 hours before baking to let the flavors set
- 8 oz sausage, cooked and drained (maple is great)
- 3 oz soft cream cheese
- 1/2 lb soft ricotta (8 oz)
- 1/2 c flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 9 eggs, beaten
- 1/2 lb Jack cheese, grated
- 1/4 lb sharp cheese grated
- 1 c chopped green onions (optional)
Vegetarian Chili

Place the eggplant in a colander and sprinkle with the coarse salt
- 1 medium-size eggplant, unpeeled, cut into 1/2 inch cubes
- 1 tablespoon coarse (kosher) salt
- 3/4 cup (or as needed) olive oil
- 2 medium-size yellow onions, cut into 1/4-inch dice
- 4 cloves garlic, finely chopped

- 1 lb maple bulk sausage
- 1 large or 2 small bags saffron rice mix
- 1 pkg dry onion soup mix
- 1 small bag, 12-16 oz, mixed veggies

- 1/2 tsp cinnamon
