Blueberry Crumble Cake

Heat oven to 350°. Spray a 9”x13” pan with non-stick spray
- Crumb Topping:
- 4 cups flour
- 11/2 cups sugar
- 5 teaspoons baking powder
- 11/2 teaspoons salt
- 1/2 cup shortening
- 11/2 cups milk
- 2 eggs
- 4 cups blueberries (thawed and drained or fresh)
- Crumb topping (recipe below)
- Glaze (recipe below)
- 1 cup sugar
- 2/3 cup flour
- 1 teaspoon cinnamon
- 1/2 cup margarine or butter, softened
- —Mix all ingredients together until crumbly (may still be a bit wet).
- Glaze:
- 1 cup powdered sugar
- 1/2 teaspoon vanilla
- 2-4 teaspoons hot water
- —Mix all ingredients until drizzling consistency.
Fiesta Sandwich Ring

- 2 packages (11 ounces each) refrigerated French bread dough
- 1 lime
- 2 tablespoons finely chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 cup mayonnaise
- 1 garlic clove, pressed
- 2 cups thinly sliced iceberg lettuce
- 2 plum tomatoes, sliced
- 1/2 cup pitted black olives, sliced
- 4 slices (1 ounce each) Colby & Monterey Jack cheese blend
- 8 ounces sliced deli turkey breast or ham

- 2 lbs maple sausage (or other bulk sausage)
- 1 1/2 c all purpose biscuit mix
- 16 oz (4 c) extra sharp shredded cheddar
- 2 Tbsp dried minced onion
- 1 tsp celery seed
- 1/2 tsp garlic powder
Hot Pink Breakfast Smoothie

This is a modified version of the GreenSmoothieGirl
- 1 1/2 cups coconut liquid or water
- 5-6 baby carrots
- 1/4 to 1/2 beet, quartered
- 1/4 c cashews (raw is best, but I use roasted)
- 1/4 c dates with pits removed (5-6)
- 1 tsp vanilla
- 12 frozen strawberries (or frozen fruit to top of blender, 2 c)
- 1-2 Tbsp flax seed, chia, or protein powder (optional)
- 1/2 tsp stevia
- 1 banana (optional)
- few leaves of greens (optional)

This is the basic recipe from the marshmallow creme jar, but with a small tweak
- 3 c sugar
- 3/4 c butter (1.5 sticks)
- 2/3 c evaporated milk (small can)
- 12 oz semi-sweet chocolate chips (2 cups)
- 7 oz jar marshmallow creme
- 1 c chopped nuts (optional)
- 1 tsp vanilla
- 2 drops almond flavoring (Wilton is great)

- 1/3 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons mayonnaise
- 1 teaspoon steak sauce

- 48 NILLA Wafers, divided
- 3/4 cups boiling water
- 1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
- 1 cup ice cubes
- 1 pkg. PHILADELPHIA Cream Cheese, softened
- 1/4 cup sugar
- 2 tsp. lemon zest
- 1 tub COOL WHIP Whipped Topping, thawed, divided
- 1/3 cup raspberry preserves
- 1 1/2 cups fresh fruit
Spicy Chicken And Sweet Potato Stew

Heat oil in a large pot or Dutch oven
- 1 tsp. olive oil
- 1 med. onion, chopped
- 1 lb. sweet potatoes or yams, peeled and cut
- into bite-size cubes
- 1 orange or yellow bell pepper, cubed
- 4 garlic cloves, peeled and crushed
- 1 lb. boneless, skinless chicken breast or thighs,
- cooked and cubed
- 2 cans (15 ounces) petite-diced tomatoes
- 2 c. water
- 1 tsp. salt
- 2 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. dried oregano
- 1 tsp. unsweetened cocoa
- 1/4-1/2 tsp. cinnamon
- 1/4 tsp. crushed red pepper, or to taste
- 1-1/2 Tbsp. flour
- 2 Tbsp. water
- 1 cup frozen corn
- 1 can (16 ounces) kidney beans, rinsed and
- drained
- 1/2 c. cilantro, chopped
- Fresh limes (optional)

- 1 block cheddar, grated (16 oz)
- 1 ham steak, ground (we buy a cheap ham, grind it, and use it for several meals)
- 16 oz macaroni (4 c)
