Easy Pressure Cooker Paella

This is not actual Paella, but a much simpler version with some of the same ingredients. It tastes great.

***If you have leftover meats and don't know what to do with them, freeze them in small bags and then make this! It is a great way to use up leftovers.

Ingredients

  • 1 large package saffron rice mix
  • 3 cups water (or per directions on rice) or chicken bullion
  • 1 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 1 Tbsp dried minced onion
  • 16 ooz bag frozen mixed veggies
  • leftover beef and/or chicken, cubed

Preparation

Step 1

Mix all ingredients in a pressure cooker. Bring to pressure and cook for 6 minutes. Let pressure come down for 10 minutes, then release. Stir and serve.
