Black Bean Soup with a Hint of Orange

This soup is adapted from a book called Sunday Soup by Betty Rosbottom
- OPTIONAL INGREDIENT:
- 1 pound dried black beans
- 2 Tbsp oilive oil
- 2 c chopped onion
- 1 1/2 Tbsp dried oregano
- Dash red pepper, to taste
- 1 tsp sea salt
- 7 c chicken stock
- 1 c freshly squeezed orange juice, 2-3 large oranges
- 1/3 c sour cream
- 2 tsp orange zest
- 2 Tbsp chopped cilantro
- 8-oz Spanish chorizo sausage, chopped
Applesauce Muffins

- 1 egg, beaten
- 1/4 Cup oil
- 1 C applesauce
- 1/2 Cup honey
- 1-3/4 C. whole grain pastry flour
- 1/2 tsp. soda
- 3/4 tsp. cinnamon
- 1/2 tsp sea salt
- 1-1/2 tsp. baking powder
- 1/4 tsp. nutmeg
- 1/4 C. chopped pecans or walnuts (optional)
- 1/2 C. raisins (optional)
Winter Squash and White Bean Stew

1. Combine all ingredients in slow cooker
- 1 cup chopped onions
- 1 Tbsp. olive oil
- 1/2 tsp. ground cumin
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 1 garlic clove, minced
- 3 cups peeled butternut
- squash cut into 3/4-inch cubes
- 1 1/2 cups chicken broth
- 19-oz can cannelloni beans, drained
- 14 1/2-oz. can diced tomatoes, undrained
- 1 Tbsp. chopped fresh cilantro
Frosty Basil Lemonade

Blend in Vitamix 90 seconds
- 3 c water
- 1 1/2 lemons, peeled and halved, seeded
- 1/4 c sugar or stevia to taste
- 1-3 fresh basil leaves
- 2 c ice
Crock Pot Mac and Cheese

This recipe can also be baked in the oven on 350 for about an hour, covered for 45 minutes
- 12 oz sharp cheddar, shredded
- 6-12 oz Colby Jack Cheese, depending on your taste
- 12 oz can evaporated milk
- 1 cup milk
- 3 eggs
- 1 tsp salt
- 16 oz macaroni, cooked (4 c equals a pound)
Remoulade Sauce

- 1/4 cup fresh lemon juice
- 3/4 cup vegetable oil
- 1/2 cup chopped onion
- 1/2 cup chopped green onions
- 1/4 cup chopped celery
- 2 tablespoons chopped garlic
- 2 tablespoons prepared horseradish
- 3 tablespoons Creole whole-grain mustard
- 3 tablespoons prepared yellow mustard
- 3 tablespoons ketchup
- 3 tablespoons chopped parsley leves
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon freshly ground black pepper
Lemon Poppy Seed Muffins (Make a Mix)

These are very nice muffins
- 2 1/4 c muffin mix
- 1 package instant lemon pudding mix (3-4 oz)
- 1 Tbsp poppy seeds
- 1/4 tsp grated lemon peel
- 1 c milk
- 2 eggs, beaten
- 1/4 c vegetable oil
- Lemon Glaze: (optional)
- 1 c powdered sugar
- 1 Tbsp lemon juice
Parmesan Pita Crisps

Preheat oven to 375*F (190*C)
- 6 (6-inch) pita breads
- 1/3 cup olive oil
- 1 1/2 cups freshly grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Sweet Potato Brownies

These are so good! And better for you than a traditional brownie
- 1 1/2 c sugar
- 1/2 c butter, softened
- 1 1/2 c all-purpose flour
- 1 tsp salt
- 4 eggs, beaten
- 2 tsp vanilla
- 2 c grated sweet potatoes (1-2)
BBQ Sauce

In a small pot add 1/4 cup of water and warm it slightly while adding: salt, brown sugar Stir and dissolve
- 1/4 cup of water
- 1 TBSP salt
- 2 TBSP brown sugar
- 3/4 cup of apple cider vinegar
- 1/4 cup lemon juice
- 1/8 - 1/4 cup orange juice
- 1/8 - 1/4 cup apple juice
- 2 tsp Liquid Smoke
- 12oz can of Tomato Paste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dry roasted ground chili pepper
- 1/4 - 1/2 tsp dry cayenne or as much as you like
- 2 tsp freshly ground black pepper
