Ingredients
- 2 1/4 c muffin mix
- 1 package instant lemon pudding mix (3-4 oz)
- 1 Tbsp poppy seeds
- 1/4 tsp grated lemon peel
- 1 c milk
- 2 eggs, beaten
- 1/4 c vegetable oil
- Lemon Glaze: (optional)
- 1 c powdered sugar
- 1 Tbsp lemon juice

Preparation
Step 1
Preheat oven to 400. Spray 10-12 muffin tins with vegetable spray. In a large bowl, combine muffin mix, pudding mix, poppy seeds and lemon peel.
Combine eggs, milk, and oil in a bowl. Add to dry ingredients and stir until moist. Batter will be lumpy. Fill muffin tins no more than 3/4 full.
Bake 12-15 minutes or until golden.
Mix glaze and drizzle on warm muffins.
