Strawberry-Chicken Spinach Salad

- 1 (6-oz.) package fresh baby spinach
- 2 cups sliced strawberries
- 1 cup diced nectarines
- 3/4 cup diced English cucumber
- 1/2 cup sliced red onion
- 4 cups coarsely chopped grilled chicken breasts
- 1 (3.5-oz.) package roasted glazed pecan pieces
- 1 (8-oz.) bottle poppy seed dressing
- 1/2 cup sweetened dried cranberries
- 1/2 cup crumbled blue cheese
Chocolate Buttercream Frosting

Melt chocolate in microwave, but don’t let it burn
- 4 ounces unsweetened chocolate
- 1/2 pound unsalted butter
- 4 cups powdered sugar
- 4 tablespoons milk
- 3 teaspoons vanilla
Corn and Beef Bake

This is an easy recipe if you keep hamburger on hand in the freezer like we do
- 1/2- 1 lb ground beef, cooked and drained
- 1 can (14-15 oz.) diced tomatoes
- 1 small can tomato sauce
- 1 can corn, drained
- 1 Tbsp. chili powder
- 1 pkg corn muffin mix
- milk and egg per package directions
BBQ Chex Mix

Mix all spices and oil. Toss with cereal and pretzels in a large bowl
- 8 c Chex cereal
- 1 c pretzels
- 1 tsp sugar
- 2 tsp paprika
- 1/2 tsp garlic
- 1/2 tsp onion salt
- 1/4 tsp dry mustard
- 1/8 tsp cayenne
- 3 Tbsp vegetable oil
- 1 1/2 tsp Worcestershire
Lemon-raspberry mousse squares

From Kraft
- 48 NILLA Wafers, divided
- 3/4 cup boiling water
- 1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
- 1 cup ice cubes
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1/4 cup sugar
- 2 tsp. lemon zest
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
- 1/3 cup raspberry preserves
- 1-1/2 cups fresh fruit
Chicken Noodle Casserole

Preheat oven to 350°. Boil noodles until almost done so that they won’t get mushy when baked
- 2 lbs. boneless, skinless chicken, cooked & chopped
- 1 bag egg noodles
- 2 sleeves Ritz crackers
- 1 stick butter
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 small tub sour cream
Unstuffed Zucchini Casserole

Start the wild rice, cooking according to directions on the package
- 1 large zucchini, diced
- 1 large Vidalia onion, diced
- 1 clove garlic, minced
- 3 Tbsp. butter
- 1 tsp. Mrs. Dash® seasoning (to taste)
- 1/2 C. wild rice (Trader Joe’s mix is my favorite)
- 1 1/4 C. water
- 3 whole eggs, beaten
- 1 1/2 Tbsp. flour
- 1/2 C. feta cheese, crumbled
- 3/4 C. Italian cheese, shredded
- 2 whole sausages (al fresco natural chicken are
- my favorite), quartered lengthwise and sliced
- 1 C. Italian bread crumbs
Marvelous Kale

Well, this isn't a recipe as far as a bunch of ingredients goes, it's more of a how-to on kale
- What to look for: Buy bunches that are not wilted or slimy. Small or big leaves, either is fine. One bunch is enough for adding to a soup. If you want a side dish, get 2-3 bunches.
Beef Burgundy Simplified

- 2 T. oil
- 18 small white onions, peeled (or frozen)
- 3-5 pounds beef chuck, cut in 1 1/2 inch cubes
- 2 T flour
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1-2 C. Burgundy or other dry red cooking wine
- 2 cloves garlic, crushed
- 3/4 Cup beef stock or canned beef bouillon)
- 1 8 oz can tomato sauce
- 2 T. chopped parsley
- 1 bay leaf
- 1 tsp. thyme
- 3/4 pound fresh mushrooms
- 2 T. butter
