- 1 (28-oz) can whole tomatoes in purée
- 1 medium onion, chopped

- 2/3 cup packed dark brown sugar
- 1/2 cup cider vinegar
- 1/2 teaspoon salt
Chili Con Queso Cheese Dip

Great recipe. Absolutely delicious!
- 1 lb ground beef
- 1/2 cup chopped onion
- 1 cup Velveeta cheese, cubed
- 10-oz can diced tomatoes and green chilies
- 1 can evaporated milk
- 2 Tbsp chili powder

Zucchini Muffins

Preheat oven to 400. Spray muffin tins with vegetable spray
- 2 c muffin mix (Make a Mix)
- 1/4 c sugar
- 1/2 c chopped nuts
- 1 Tbsp cinnamon
- 1 c grated zucchini
- 1 egg, beaten
- 1/2 c butter, melted
- 2 tsp vanilla extract
Shrimp and Corn Salad

From Real Simple
- 2 cups fresh corn kernels (from 3 ears) or one 10-ounce package frozen corn, thawed
- 1 pint cherry tomatoes, quartered
- 1 small jicama, cut into thin strips (optional)
- 1 pound peeled and deveined large cooked shrimp
- 1/2 cup (3.5 ounces) shelled roasted pumpkin seeds
- 6 scallions (white and light green parts), thinly sliced
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lime juice
- 2 teaspoons honey
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper

This was a recipe from a friend for a great salsa
- 1 vidalia onion, chopped fine
- 2 cloves minced garlic
- 2 cans whole tomatoes, drained
- 2 Tbsp lime juice
- 1 small can diced green chilies
- 1 jalepeno, chopped (to taste)
- 4 oz tomato sauce
- 1 1/2 Tbsp sugar
High Protein Bars

Preheat oven to 350*F (175*C)
- 5 large eggs, (OR 10 egg whites)
- 1 cup canola OR vegetable oil
- 1 1/2 cups honey
- 1/2 cup corn syrup
- Juice and pulp of 3 oranges
- 1 cup whole wheat flour
- 1 1/2 cup soy flour
- 1/2 cup dry milk powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 cups rolled oats
- 1 cup wheat germ
- 1/2 teaspoon baking soda

Place 4 tbsp sugar, salt, and spices in large bowl
- 2 tbsp butter
- 2 tbsp sugar
- 1 tsp cinnamon
- pinch salt
- pinch cloves
- pinch nutmeg
- pinch cayenne
- 4 tbsp sugar
- 1/2 cup almonds
- 1/2 cup pecans
- 1/2 cup other nuts or seeds

Saute onion, pepper and celery in oil
- 1 lb ground beef or turkey
- 1 16 oz can diced or crushed tomatoes (family doesn’t like chunks of tomatoes)
- 1 pkg dry onion soup mix
- 1 1/2 Tbsp cili powder
- 1/2- 1 tsp cumin
- 2 15 oz cans kidney beans, drained and rinsed (or 2 c dry, soaked and cooked)
- 1 small diced onion
- 2 stalks celery, diced
- 1/2 c diced green pepper (or 3 Tbsp dried)
- 1 Tbsp olive oil

Saute carrots, celery, and onion in butter and olive oil in a large pot
- 2 Tbsp butter 1 Tbsp olive oil
- 2 carrots, diced
- 4 stalks celery, diced
- 1 onion, diced
- 1 tomato, chopped
- 1/2 head of cabbage, chopped
- 2 zucchini, chopped
- 3 garlic cloves, minced
- 1 tsp dried basil
- 1 Tbsp dried parsley
- 1 Bay leaf
- 1 c frozen cut green beans
- 5 cups chicken broth (5 c water, 5 chicken bullion cubes)
- 5 c water
- 1 can butter beans
- 1 can great northern beans
- 1/2 c Parmesan
Crockpot Chalupas

Put everything in a crockpot and cook on high all day
- 1 lb. pinto beans
- 2-3 lb. pork roast
- 1 can chopped green chilies
- 1/2 cup chopped onion
- 2 cloves garlic
- 6 cups water
- 2 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. oregano
- 1 Tbsp. salt
