- 2-3 Tbsp. cornstarch
- 1/4 cup Parmesan cheese, grated
Peanut Butter Puppy Treats

This recipe is versatile. You can substitute rice flour or other flours of your choice for the 4 c whole wheat
- 4 c whole wheat flour
- 2 c oatmeal
- 2 1/2 c hot water
- 3/4 c peanut butter
- 1 tsp cinnamon
- 1 tsp ginger (optional)
Chocolate Chess Pie

1. Preheat oven to 325 degrees
- 1 1/2 cups sugar
- 5 tbsp cocoa powder
- 2 tbsp all purpose flour
- 1/4 tsp salt
- 1/2 cup evaporated milk
- 3 large eggs, room temperature
- 1/3 cup unsalted butter, softened
- 1 tsp vanilla
- 1 partially 9- inch baked pie crusts

1. In slow cooker, combine potatoes, cheese, pepperoni, and salt
- 6 medium potatoes, sliced
- 2 Tbsp olive oil
- 2 cups grated mozzarella cheese
- 2 oz sliced pepperoni
- 1 tsp salt
- 8-oz can pizza sauce
Portabello Mushrooms Stuffed with Spinach and Dried Tomatoes

I modified this recipe to suit my own tastes
- Filling:
- 10 ounces baby spinach leaves, rinsed
- Extra-virgin olive oil
- 1/2 cup finely chopped yellow onion
- 2 teaspoons finely chopped garlic
- 1 cup finely diced ripe tomato
- 1/4 cup oil-packed, sun-dried tomatoes, thinly sliced
- Kosher salt
- Freshly ground black pepper
- :
- 4 large portabello mushrooms, 5 to 6 inches in diameter
Spicy Chicken And Sweet Potato Stew

Heat oil in a large pot or Dutch oven
- 1 tsp. olive oil
- 1 med. onion, chopped
- 1 lb. sweet potatoes or yams, peeled and cut
- into bite-size cubes
- 1 orange or yellow bell pepper, cubed
- 4 garlic cloves, peeled and crushed
- 1 lb. boneless, skinless chicken breast or thighs,
- cooked and cubed
- 2 cans (15 ounces) petite-diced tomatoes
- 2 c. water
- 1 tsp. salt
- 2 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. dried oregano
- 1 tsp. unsweetened cocoa
- 1/4-1/2 tsp. cinnamon
- 1/4 tsp. crushed red pepper, or to taste
- 1-1/2 Tbsp. flour
- 2 Tbsp. water
- 1 cup frozen corn
- 1 can (16 ounces) kidney beans, rinsed and
- drained
- 1/2 c. cilantro, chopped
- Fresh limes (optional)
Chicken Pasta Salad

This is a refreshing salad with a light tasting dressing
- Dressing:
- fresh ginger-root to taste
- 1/3 c rice vinegar
- 1/4 c orange juice
- 1/4 c vegetable oil
- 1 tsp sesame oil
- 1 envelope onion soup mix
- 1 tsp minced garlic
- 2 tsp sugar
- Salad Ingredients:
- 8 oz bow-tie pasta, cooked, drained and rinsed
- 1/2 cucumber, chopped
- 1/2 red bell pepper, chopped
- 6 oz baby spinach
- 1 small can mandarin oranges, drained
- 2 c cooked chicken
Deviled Eggs

Halve 7 eggs lengthwise. Remove yolks and place in a small bowl
- 7 large eggs, hard boiled and peeled
- 1/4 cup mayonnaise
- 1 1/2 tablespoons sweet pickle relish
- 1 teaspoon prepared mustard
- Salt and pepper, for taste
- Paprika, for garnishing

- 4 Tbsp baking powder (5 if using wheat flour)
- 1 Tbsp salt
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1 1/2 c dry milk
- 2 1/4 c shortening
