- 8 medium garlic cloves , minced or pressed through garlic press (about 2 1/2 tablespoons) (4 cloves=1 1/4 Tbsp)
- 1 teaspoon finely grated zest from 1 lemon , plus 2 tablespoons juice (1/2 tsp zest+1 Tbsp juice)
- Pinch crushed red pepper flakes
- 4 teaspoons chopped fresh thyme leaves (2 tsp)
- 3 teaspoons chopped fresh rosemary (1 182 tsp)
- Kosher salt
- Ground black pepper
- 1 (3 3/4- to 4 1/4-pound) whole chicken (1/2 Chicken)
