- 7 large high-quality sandwich bread , crusts removed, cut into 3/4-inch cubes (about 4 cups)

- 2 cups plus 1 tablespoon vegetable oil
- 1 pork tenderloin (1 1/4 pounds). trimmed of fat and silver skin and cut on angle into 4 equal pieces (see illustration below)
- Garnishes
- 1 lemon , cut into wedges
- 2 tablespoon chopped fresh parsley leaves
- 2 tablespoons capers , rinsed
- 1 large hard-cooked egg , yolk and white separated and passed separately through fine-mesh strainer (optional)

- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 12 tablespoons cold unsalted butter,cut into 5/8-inch cubes (1 1/2 sticks)
- 7-9 tablespoons ice water
- Apple Filling
- 1 1/2 pounds apples (3-4 medium or 4-5 small)
- 2 tablespoons unsalted butter, cut into 1/4-inch pieces
- 1/4 cup sugar
- 2 tablespoons apricot preserves
- 1 tablespoon water
