Makeover Philly Steak and Cheese Stromboli

In a large nonstick skillet, saute the peppers, mushrooms and onion in oil until tender
- 2 large green peppers, julienned
- 1/2 pound sliced fresh mushrooms
- 1 large onion, halved and sliced
- 2 tablespoons canola oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 loaf (1 pound) frozen whole wheat bread dough, thawed
- 12 ounces reduced-fat process cheese (Velveeta), sliced
- 1/2 pound shaved deli roast beef, chopped
- 1 egg white
- 1 teaspoon water
- 1/4 cup shredded part-skim mozzarella cheese
Upside-Down Pizza Casserole

- Ingredients
- 1-1/2 * 1-1/2 pounds lean ground beef
- 1 * 1 15-ounce can Italian-style tomato sauce
- 1-1/2 * 1-1/2 cups shredded mozzarella cheese (6 ounces)
- 1 * 1 10-ounce package refrigerated biscuits (10 biscuits)
Mediterranean Salad Recipe

Directions * In a very large salad bowl, combine the first seven ingredients
- # DRESSING:
- # 18 cups torn romaine (about 2 large bunches)
- # 1 medium cucumber, sliced
- # 1 cup crumbled feta cheese
- # 1 cup cherry tomatoes, quartered
- # 1 small red onion, thinly sliced
- # 1/2 cup julienned roasted sweet red peppers

Reuben Mac n Cheese

Bring a large pot of water to a boil for the pasta
- Salt
- 1 pound cavatappi, hallow corkscrew shaped pasta or, other short cut
- 2 slices rye bread
- 3 tablespoons butter plus some for buttering toast
- A handful fresh parsley leaves
- 1 teaspoon paprika
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1/4 cup spicy brown deli mustard (recommended: Gulden's)
- 1 cup shredded Swiss cheese
- 1 cup shredded Gruyere
- 1 cup shredded yellow Cheddar
- 3/4 pound good quality deli corned beef, sliced as thick as bacon, chopped
- 1 pound sauerkraut, rinsed and well drained
Braised Short Ribs with Mushrooms

- 8 short ribs (12 ounces each), trimmed and tied by a butcher
- 8 shallots
- 11 cloves garlic
- 1/4 cup tomato paste
- 6 ounces pancetta, diced
- 1/2 cup plus 2 tablespoons cognac or brandy
- 1/3 cup all-purpose flour
- 2 cups red wine
- 1/4 ounce dried porcini mushrooms
- 4 sprigs fresh thyme
- 2 bay leaves
- Kosher salt and freshly ground pepper
- 1/4 cup chopped fresh parsley
- 10 ounces oyster mushrooms, trimmed
- 10 ounces cremini mushrooms, trimmed and halved
Carrabba’s CopyCat Lasagne

1) Pre-heat oven to 350 and oil a 13×9 inch pan 2) Cook sausage or meat breaking up
- olive oil for pan and lasagne sheets/noodles
- 1 1/2 pounds of sweet sausage or hot Italian sausage, casings removed. You can substitute for 85% lean beef
- 5 fresh lasagne sheets or 3 lasagne noodles for each layer (15)
- 7 cups of your marinara sauce
- 2 cups Parmesan ( I only use fresh)
- 1 pound of mozzarella
- 1 1/2 pounds of ricotta
- parsley for garnish

- 1/3 cup part-skim ricotta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup panko (Japanese breadcrumbs), toasted
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper
- 1/8 teaspoon salt
- 8 ounces lean ground pork
- 2 (4-ounce) links turkey Italian sausage, casings removed
- 1 large egg
- 1 1/2 cups lower-sodium marinara sauce

- 1 apple, peeled and grated (approx. 1 cup grated); or 1/2 cup unsweetened applesauce

- 1-1/2 cups water
- 1 cup uncooked steel-cut oats
- 2 tablespoons brown sugar
- 1-1/2 tablespoons butter, cut into 5-6 pieces (omit or substitute margarine for lactose-free, vegan)
