- 1 pound ground chuck
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 2 (14-ounce) cans Mexican-style stewed tomatoes
- 1 (15-ounce) can kidney beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon salt
- Shredded sharp Cheddar
- Sour cream
- Sliced green onions (white and green parts)
- Corn chips
Chicken Picante with Potato Pancake

1. Heat the oil in a 12-inch nonstick skillet over medium-high heat
- 2 tablespoons vegetable oil
- 1/2 of a 30-ounce package frozen country-style shredded hash-brown potatoes
- 1 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
- 1 medium zucchini, cut in quarters and sliced (about 2 cups)
