CHOCOLATE CAKE

Put butter, Crisco, water and cocoa in pan and bring to boil point (Do Not Boil)
- CAKE:
- 1 stick of unsalted butter
- 1/2 cup of Crisco
- 1 cup water
- 4 tablespoons of cocoa (heaping)
- 2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- Pinch of salt
- ICING:
- 1 stick unsalted butter
- 4 tablespoons cocoa
- 6 tablespoons whole milk
- 1 box powdered sugar
- 1 teaspoon vanilla
- 1/2 cup cut up walnuts
- 3/4 cup coconut (angel flaked)
Soft Pretzels!

Combine 1 1/2 cups warm water, sugar, and 2 teaspoons of the kosher salt in mixer bowl
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 4 teaspoons kosher salt, divided
- 2 1/4 teaspoons yeast
- 1 /2 cup butter, divided
- 4 1/2 cups flour
- oil for greasing mixing bowl and cookie sheets
- 10 cups water
- 2/3 cup baking soda
- 1 egg yolk
Dutch Oven Beef Roast with Onions

Add olive oil to the Dutch oven and brown all sides of beef roast
- 1 Tbsp olive oil ($.10)
- 1 (1 1/4 lb.) beef chuck roast ($3.26)
- 4 small white onions ($.80)
- 2 Tbsp brown sugar ($.03)
- 1 Tbsp balsamic vinegar ($.05)
- 1 tsp basil leaves ($.05)
- Salt and pepper to taste
Raspberry Meringue Spectacular

Preheat the oven to 275 degree F
- 3 egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 2/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1 container (12 ounces) light frozen whipped topping, thawed
- 1/4 cup semisweet chocolate chips, finely chopped
- 1 package (12 ounces) frozen raspberries, thawed
- 1/2 pint fresh raspberries
STRAWBERRY CHEESECAKE

Melt stick of butter and stir into crushed pretzels; add 2 teaspoons sugar
- 2 c. crushed pretzels
- 1 stick butter
- 2 tsp. sugar
- 1 (8 oz.) pkg. cream cheese
- 1/3 c. sugar
- 1 (9 oz.) carton Cool Whip
- 1 (6 oz.) pkg. strawberry Jello
- 3 c. hot water
Sweet and Spicy Pickles

In a large saucepan over high heat, combine vinegar, sugar, pickling spice, and jalapeno pepper
- 4 cups white vinegar
- 4 cups sugar
- 1 tablespoon pickling spice
- 1 jalapeño pepper, stem and seeds removed
- 2 pounds cucumbers, sliced 1/8-inch thick

Coconut-Cherry Cookies

Mix together dry cake mix, oil and eggs in a large bowl
- 1 (18-1/2 oz.) pkg. white cake mix
- 1/4 c. oil
- 2 eggs, beaten
- 1/2 c. sweetened flaked coconut
- 1 (10-oz.) jar maraschino cherries, drained, patted dry and chopped
Potato Macaroni Salad

Cook potatoes night before, drain thoroughly, and chill in refrigerator overnight
- Dressing:
- 5 large potatoes
- 1 cup shell macaroni-dry
- 2 carrots, shredded
- 2 stalks of celery, finely chopped
- 2 green onions, finely chopped
- 3 hard boiled eggs, coarsely chopped
- 3 sweet pickles, coarsely chopped
- 1 cup frozen peas, lightly cooked
- Salt and pepper to taste
- 1-1/4 cup mayonnaise
- 1/2 cup Italian dressing
- 2 tablespoon of pickle juice
- 1 teaspoon of mustard
- A bit of dill weed (optional)
