Boil chicken, shred and set to the side
- 1 whole chicken
- 1 Tablespoon oil
- 1/2 chopped onion
- 1 can of tomato sauce
- 1 Tablespoon minced Garlic
- 2 heaping T sofrito sauce
- 1 packet of Sazon Goya seasoning
- 2 cups of water
- 5-6 large potatoes
- 1/2 bag of baby carrots
- 1 whole bell pepper

- 11 Heat oven to 425°F. In 2-quart saucepan, heat cooking sauce and frozen vegetables over medium heat until warm. Stir in chicken, dry potatoes, 1/2 teaspoon salt and 1/8 teaspoon pepper; stir until thickened.
