Blueberry Pancakes and Blueberry Syrup

In a saucepan, combine sugar and cornstarch
- Syrup:
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 cup water
- 1 cup fresh blueberries
- Pancakes;
- 1 cup flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg
- 3/4 cup milk
- 1/2 cup sour cream
- 3 tablespoons butter, melted
- 1/2 cup fresh blueberries
Watermelon Patch Shortcake

Place the biscuits on a baking sheet and brush the tops with the melted butter
- 1 package (17.3 ounces) refrigerated biscuits (8 biscuits)
- 1 tablespoon butter, melted
- 3 tablespoons granulated sugar, divided
- 1/4 teaspoon ground cinnamon
- 1 cup (1/2 pint) heavy cream
- 2 cups watermelon, diced
- 1/2 cup raspberry Melba sauce
Orange No Bake Cookies

Mix all ingredients except coconut in bowl(as you would mix a meatloaf)
- 3/4 box powdered sugar
- 1 cup chopped pecans
- 1 lb box vanilla wafers (crushed)
- 1 stick melted butter
- 6 oz. can frozen orange juice (thawed)
- 1-2 cups coconut
Piña Colada Cupcakes

Add mix, eggs, and oil according to the package
- 1 box white cake mix
- 1 cup pineapple juice
- 1/3 cup coconut rum
- eggs (according to package)
- vegetable oil (according to package)
- 8 oz. can crushed pineapple in juice, drained well (optional)
- 1/2 cup shredded, sweetened coconut (optional)
Hamburger Macaroni Casserole

In food processor, process garlic until minced, then add carrots and mushrooms and process until finely chopped
- 1 lb extra lean (96%) lean ground beef
- 2 cups Ronzoni Smart Taste Macaroni Noodles
- 1 1/2 cups fat free beef broth
- 10 ounces white mushrooms
- 2 large tomatoes, cut into chunks
- 2 large carrots, cut into chunks
- 1 large onion, cut into chunks
- 4 cloves garlic, peeled
- 1/2 cup fat free sour cream
- 2 cups water
- 2 tbsp Worcestershire sauce
- 2 tbsp whole wheat flour
- 2 tsp dried thyme
- 2 tsp dried sage
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
Slow Cooker Three-Bean Chili #3

1 Mix all ingredients except tomatoes and tomato sauce in 3- to 4-quart slow cooker
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15.5 ounces) garbanzo beans, rinsed and drained
- 1 can (15.5 ounces) kidney beans, rinsed and drained
- 1 cup dried lentils (8 ounces), sorted and rinsed
- 1 large vegetarian vegetable or chicken bouillon cube, crumbled
- 1 envelope (1.25 ounces) chili seasoning mix
- 3 cups water
- 1 can (10 ounces) diced tomatoes and mild green chilies, undrained
- 1 ca n (15 ounces) tomato sauce

Preheat oven to 350F. Grease and flour a 9×13 inch baking pan
- 1 1 ounces) 1 (15.25 ounces) yellow cake mix
- 1/2 1/2 1/2 cup butter, softened
- 4 4 4 eggs
- 1 1 1 teaspoon vanilla extract
- 1 1/2 1 1/2 1/2 cups dark corn syrup
- 1/2 1/2 1/2 cup packed brown sugar
- 1 1 1 cup chopped pecans
Sweet Potato Puff

- 3 cups cooked and mashed sweet potatoes (about 4 medium-sized potatoes)
- 3 tablespoons butter
- 3/4 cup milk
- Dash of pepper
- 2 eggs, separated
- 1/4 teaspoon salt
Mandarin Orange Chicken

Spray a large skillet with nonstick cooking spray
- 1 pound skinless, boneless chicken breasts, cut into strips
- 1 tablespoon minced fresh ginger
- 1 to 2 tablespoons light soy sauce
- 2 cups red bell pepper, sliced into strips
- 1 cup green onions, sliced into 1-inch pieces
- 3/4 cup fat-free chicken broth*
- 1 tablespoon cornstarch
- 1 can (11 ounces) mandarin oranges in their own juice, drained
- 1 can (8 ounces) sliced water chestnuts, drained
- brown rice or noodles (optional)
