Raspberry Almond Mocha Torte

With a serrated knife, slice the pound cake into 5 horizontal slices
- 1 (16-ounce) pound cake
- 1/2 cup raspberry preserves
- 1 tablespoon instant coffee granules
- 1 (16-ounce) container chocolate frosting

Chicken and Spinach Tortellini Soup

Cook tortellini in a Dutch oven according to package directions, using 1 can broth instead of water
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 (14 1/2 ounce) can fat-free, reduced-sodium chicken broth
- 2 (10 3/4 ounce) cans reduced-fat, reduced-sodium cream of chicken soup
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 (9 ounce) package refrigerated cooked diced chicken breast
- 2 cups fat-free milk
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
JEANNE'S CHOCOLATE KISS COOKIES

Preheat oven to 350 degrees
- 1 c. butter
- 2 c. granulated sugar
- 2 eggs
- 2 tsp. vanilla extract
- 3 c. all-purpose flour
- 3/4 c. unsweetened cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 54 milk chocolate candy kisses, unwrapped
- 1/3 c. granulated sugar for rolling
Cuban-Style Black Beans and Rice

Dissolve 1 and 1/2 tbsp. salt in 2 quarts of cold water in a large bowl
- Salt
- 1 cup dried black beans, rinsed and picked over
- 2 cups low-sodium chicken broth
- 2 cups water
- 2 large green bell peppers, halved and seeded
- 1 large onion, halved at equator and peeled, root end left intact
- 1 5 garlic, 5 medium cloves removed and minced or pressed, remaining head halved at equator with skin left intact
- 2 bay leaves
- 1 1/2 1/2 cups long grain white rice
- 2 tbsp. olive oil
- 6 6 1/4 salt pork (or 6 pieces of bacon) cut into 1/4 inch dice
- 1 tbsp. minced fresh oregano leaves
- 4 tsp. ground cumin
- 2 tbsp. red wine vinegar
- Scallions, lime, and tomato for garnishes (optional)
Deviled Beef Rolls

Preheat the broiler. In small bowl, combine onion soup mix and water
- 2 tablespoons dried onion soup mix
- 4 teaspoons water
- 3 tablespoons Dijon mustard
- 4 (6-ounce) cubed steaks
- 1/4 teaspoon black pepper
- 1 (4-ounce) can sliced mushrooms, drained
- 2 tablespoons butter, melted
