Tuna Pie

Make a simple pie crust and line a baking dish with it
- 1 pie crust
- 2 to 3 cups of vegetables (mixed vegetables, beans, corn, peas, and carrots, set 1 can tuna (don’t drain)
- 1 tablespoon cornstarch
- 1/2 cup of the vegetable liquid
Mexican Chili Topped Potatoes

1. Bake the potatoes in the oven
- 4 large baking potatoes ($.80)

- 2 15 oz. cans “chili ready” diced tomatoes, drained ($.16 each) Substitute2 15 oz. can of diced tomatoes and add some chili powder and 1 cup chopped onions

- 1 1/2 Tbsp homemade taco seasoning ($.10)
- 2 garlic cloves, crushed or minced ($.05)
- Salt and pepper, to taste
- Butter for the potatoes, if you like ($.20)

- 1 medium red onion, finely chopped (1/2 cup)

- 1 teaspoon ground coriander
- 1/4 teaspoon ground black pepper
- 2 tablespoons butter or margarine
- 3 tablespoons all-purpose flour
- 1 8-ounce carton dairy sour cream
- 1 14-ounce can chicken broth
- 1 or 2 canned jalapeno peppers, rinsed, seeded, and chopped* or one 4-ounce can diced green chili peppers, drained
