- Gingerbread Cookies:
- 2 boxes (14.5 oz each) gingerbread cake and cookie mix (we used Betty Crocker)
- 1/2 cup all-purpose flour
- 1/2 cup hot black coffee or water
- 1/2 stick (1/4 cup) unsalted butter, melted
- Eggnog Glaze:
- 2 cups confectioners' sugar
- 1/4 cup eggnog or milk
- 1 tsp rum flavor extract
- Decorations: black licorice, sweetened flaked coconut (finely chopped), white nonpareils

- 1/4 cup sweetened shredded coconut

Cut meat into bite-sized pieces, stir-fry in large pan in hot oil for a few minutes, remove and keep warm

- 2 garlic cloves
- 2 red onions, sliced lengthwise
- 2 large tomatoes, cut into wedges
- 1 red bell pepper, cut into strips
- 1 Tablespoon fresh oregano
- 1 Tablespoon white wine vinegar
- 2 Tablespoons soy sauce
- 1 Tablespoon flat leaf parsley
- salt and pepper
