Baked Mustard-Mayo Fish Steaks

Heat oven to 375 degrees. Mix together mayonnaise and mustard in a small bowl; stir in tarragon, salt and pepper
- 2 Tablespoons mayonnaise
- 2 Tablespoons mustard
- 3 to 6 tarragon leaves, minced (can use and did thyme, oregano, or parsley--fresh or dried)
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 swordfish or salmon steaks, 6-8 oz each (used tilapia-yummy)
Grilled Pesto Chicken Packs

1 Heat coals or gas grill for direct heat
- 4 boneless skinless chicken breast halves (1 1/4 pounds)
- 8 Roma (plum) tomatoes, cut into 1/2 inch slices
- 4 small zucchini, cut into 1/2-inch slices
