POLLO GUISADO

1. Season chicken with adobo, garlic powder, cumin and oregano and marinate it 2 hours or overnight
- 3 large bone-in breasts, cut up in chunks) or 1-2 lbs of chicken pieces
- Adobo Goya (or to taste)
- Garlic powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/4 cup canola oil
- 5 tablespoons sofrito (click here for the recipe)
- 1 8-oz can tomato sauce
- 1/2 cup olives, pitted with pimentos
- 2-3 sprigs of cilantro
- 3 large carrots, sliced (if desired)
- 3 potatoes, cubed
- Salt to taste
Arroz con Pollo

In a large caldero brown the chicken parts in the oil, 5 minutes each side
- 2 cups uncooked rice
- 1 lb chicken parts
- 1 small can tomato sauce
- 2 tablespoons of sliced Spanish Olives, with red peppers
- 1 teaspoon alcaparras
- 1/2 cup sofrito
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 tablespoon salt
- 1/2 cup vegetable oil
- 4 cups of boiling water
Sofrito

Wash, peel, seed and coarsly chop everything
- 1 large yellow onion
- 1 pimiento (Cubanelle) or substitute with green bell pepper
- 1 red bell pepper or 1 sm jar roasted red peppers
- 1 medium head of garlic (2 tbsp. minced garlic)
- 1 bunch of cilantro
- 12 ajíes dulces (hard to find and may skip)
- 6 leaves of recao-(Eryngium) (hard to find/skip)
- 1/4 cup Spanish olives, pitted
- 1 tbsp capers
- 2 tsp salt
- 1 tbsp black pepper
- 1 tbsp crushed orégano
- 1/2 cup olive oil
6-LAYER DINNER

In a 6-quart slow cooker, add in ground beef, tomato paste, garlic, 1½ teaspoon of salt, and pepper
- 2 pounds ground beef
- 1 onion, thinly sliced
- 1 pound of your favorite potato, thinly sliced (we used sweet potatoes)
- 3 medium-sized tomatoes, thinly sliced
- 2 cups zucchini, thinly sliced
- 1 bunch fresh basil, roughly chopped
- 7 cloves garlic, minced into a paste
- 3 tablespoons tomato paste
- 1 tablespoon olive oil
- 2 teaspoons salt
- Pepper to taste
Grilled Lilikoi Chicken

Grilled Chicken Preparation: Combine all above ingredients except chicken and mix well
- Grilled Chicken Preparation:
- 3 Teaspoon sesame oil
- 1 Teaspoon fresh ginger, grated
- 2 Tablespoon cilantro, chopped

- 1 ⁄2 Cup green onions, finely minced

- 1 each lemon, juice and zest
- 4 Pound chicken breast and/or thighs with bone and skin

- 1 Can 12 oz. lilikoi concentrate
- 1 ⁄2 Cup pineapple juice
- 1 ⁄4 Cup Mae Ploy chili sauce
- 1 Teaspoon chili garlic sauce
- 4 Tablespoon rice wine vinegar
- 3 Tablespoon Brown Sugar
- 1 ⁄2 Teaspoon vanilla extract
- 3 Tablespoon cornstarch
- 3 Tablespoon water

1. Reserve about 8 strawberry slices to use later for garnish
- 2 1/2 cups sliced strawberries
- 2 tablespoons granulated sugar substitute (or 3 packets)*
- 1/2 cup low-fat cottage cheese
- 1/4 cup light tub-style cream cheese
- 1 1/2 tablespoons granulated sugar substitute (or 2 packets)*
- 3/4 light whipped topping, thawed

Easy Reduced Sugar Strawberry Muffins

1. Preheat the oven to 375°F
- 2 large eggs
- 1/4 cup margarine or butter, melted
- 1/2 cup low-fat milk
- 3/4 cup low-sugar strawberry jam (like Smuckers)
- 1 1/2 teaspoons lemon zest
- 1 3/4 cups all-purpose flour
- 3 tablespoons granulated sugar

Place meat in a large bowl
- 3 Pound beef chuck, cut into 1 1/2" cubes
- 1 1⁄2 Teaspoon salt
- 1 Teaspoon ground black pepper
- 3 Tablespoon vegetable oil
- 1 Cup bacon, sliced into 1/2" pieces
- 2 each 2 each medium-large onions, chopped (2 cups)
- 2 Tablespoon tomato paste
- 3 each 3 each garlic cloves, minced
- 3 Tablespoon all purpose flour
- 1 Cup full-bodied red wine
- 2 Cup homemade chicken broth or low-sodium canned broth
- 2 each 2 each bay leaves
- 4 each 4 each large carrots, peeled and sliced 1/4" thick or 1/2 lb. baby carrots
- 1 Cup celery, sliced
- 5 each 5 each red bliss potatoes, washed and cut into quarters
