Pepper Steak

1. Sprinkle the black pepper liberally over the steak and rub in slightly
- 2 pounds (900 g) top sirloin steak
- 1 red bell pepper, cut in a large dice
- 1 green bell pepper, cut in a large dice
- 1 onion, cut in a large dice
- 1 cup (250 ml) beef broth, plus 1/2 cup
- 3 tablespoons (45 ml) soy sauce
- 1 tablespoon (15 ml) cornstarch
- 2 teaspoons (10 ml) brown sugar
- 1 teaspoon (5 ml) ground ginger
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) freshly ground black pepper
Oven Roasted Chicken Thighs with Summer Vegetables

1. Preheat oven to 400 degrees f
- 2 ears of fresh corn, shucked and cut into thirds
- 2 medium zucchini, tops trimmed off, cut into 2 inch chunks
- 2 red bell peppers, seeded and cut into 1/6ths
- 1 sweet onion, peeled and cut into 1/6ths
- 12 each small potatoes, washed (red bliss, fingerling, Yukon gold)
- 10 peeled garlic cloves
- 4 stalk green onion, cut into 2 inch segments, root removed
- 4 Pound chicken thighs
- Extra virgin olive oil as needed
- Salt and Pepper as needed
- 1 lemon, cut into wedges

Add ingredients to pot on medium-high heat and bring to a rolling boil
- 2 (15 oz) cans of pink beans
- 1 cup ham chopped into small cubes
- 1 large potato, peeled and cubed
- 12 oz tomato sauce
- 1/3 cup sofrito
- 1 envelope Sazon with achiote
- 2 cups water
- Salt, ground black pepper, & garlic powder to taste
Chicken With Tomato Wine Sauce (Chicken Cacciatore)

1. Liberally season chicken thighs with salt and pepper
- 1 1/2 pounds chicken thighs
- 3 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 1/2 medium-sized onion, sliced
- 1 red bell pepper, sliced
- 2 tablespoons tomato paste
- 4 cloves garlic, minced
- 1 teaspoons dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon rosemary
- 1/2 cup red wine
- 1 14-ounce can diced tomatoes
- 1 cup chicken stock
- 1/4 cup fresh parsley
- Salt, to taste
- Pepper to taste

1. Preheat oven to 400˚F/200˚C
- 2 –3 boneless skinless chicken breasts
- 3 bell peppers, any color, sliced
- 1 large red onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon taco seasoning
- Salt and pepper
- 1 jar salsa
- 3 cups cooked brown rice, divided
- 1 can black beans, drained and rinsed
- 1 can corn
- 1 cup shredded cheddar cheese
- 1 lime, sliced into wedges
- Fresh cilantro to garnish

BRAISED SHORT RIBS
