Wendell's Beef Tomato

Soak beef slices in marinade for 15 to 20 minutes
- Marinade:
- 1 pound beef, thinly sliced
- 1 onion, wedged
- 2 stalks celery, cut diagonally in thick slices
- 2 green peppers, wedged
- 1 to 2 tomatoes, wedged
- 2 stalks green onion, cut in 1 1/2 inch lengths
- pinch of salt
- Oil for frying
- 1-inch piece fresh ginger, crushed
- 1 clove garlic, crushed
- 1/2 tsp sugar
- 2 tbs shoyu
- 1 tbs sherry
- pinch of pepper
- 1 tbs cornstarch
- 1 tbs oil
- Gravy:
- 1 tbs cornstarch
- 1 1/2 tsp sugar
- 1 tsp shoyu
- 1/2 tsp Worcestershire sauce
- 1 tbs catsup
Oven Baked Chow Mein Noodles

Preheat oven to 350 degrees
- garnish:
- 1 lb. fresh chow mein noodles
- 1/2 TB sesame seed oil
- 1/2 TB vegetable oil
- 1/2 lb. prepared char siu pork, thinly sliced, slivers, divided
- 1 ( 8-9 oz) pkg. bean sprouts
- 1 small onion, thinly sliced
- 2 stalks celery, thinly sliced diagonally
- 4 stalks green onion., chopped, divided
- 1 medium carrot, peeled, thinly sliced, slivers
- 1/4 c. thinly sliced slivers, char siu pork, chopped green onion
- Sauce:
- 2 TB oyster sauce
- 2 TB Aloha shoyu
- 1 TB sugar
- 1 TB sesame seed oil
- 1 tsp. salt
Fried Chicken

Soak the chicken in buttermilk for 6 hours
- 6 chicken legs
- 4 cup flour
- 2 tablespoon Garlic powder
- 2 tablespoon onion powder
- 2 tablespoon cumin
- 1 tablespoon ground thyme
- 2 tablespoon black pepper
- 1 us liquid quart buttermilk
- 8 cup Canola Oil

- 1 Small salchichón (hard salami or Genoa salami), sliced
- 1 potato, cubed
- 6 cups water or chicken stock
- 1 tbsp olive oil
- 1/2 pack of angel hair spaghetti (broken in half)
- 1 tbsp chopped parsley
- 1/2 tsp mashed garlic or garlic powder
- 1/2 tsp onion powder
- 1/4 cup chopped celery
- 2 envelopes Sazón
- 2 tbsp sofrito
- 1 bunch cilantro, chopped
- 1/4 cup tomato sauce
- Salt and adobo to taste
DAVE’S FCD’S BLACK BEAN and SIRLOIN CHILI

In a heavy pot, brown the meat with olive oil on med-high heat
- 1/4 cup olive oil
- 3 pounds boneless tri tip, cut into 1 inch cubes
- 1 large onion, chopped
- 2 Tbsp. garlic, minced
- 3 whole fresh jalapenos, chopped fine with seeds
- 1/3 cup Masa Harina, corn flour
- 1/3 cup, plus 1 tsp. chili powder
- 1/2 tsp. cayenne pepper
- 1/2 tsp. ground cumin
- 1/2 tsp. white pepper
- 2 tsp Kosher salt
- 2 14 oz cans Swanson’s beef broth
- 1/2 cup water
- 2 15 oz cans black beans, drained & rinsed
- 1 15 oz can kidney beans, drained & rinsed (optional)
- 1 29 oz can hominy, drained (optional)
Okinawan Shoyu Pork

Soak meat in Sake in sealable plastic bag for at least one hour or overnight
- 3 to 4 pound boneless pork butt
- 1/2 cup Sake
- 2 thumb-size pieces ginger
- 1 cup shoyu (soy sauce)
- 1 cup granulated sugar
- 1 tablespoon mirin
- Chopped green onions
Crock Pot Carne Guisada (Latin Beef Stew)

Heat a large nonstick skillet over medium heat
- 2 tsp olive oil
- 1 cup scallions, chopped
- 3 cloves garlic, minced
- 2 small tomatoes, chopped
- 2 tbsp cilantro, minced
- 1 1/2 lb choice Top round beef stew, cut into small chunks
- 2 tablespoons all purpose flour
- 1/3 cup light beer (I used Corona light)
- 1/3 cup water
- 1/2 tsp cumin
- 1/4 tsp dry adobo seasoning (or seasoned salt)
- 1/2 tsp ground achiote (or Badia Sazon, or paprika)
- 1 dried bay leaf
- kosher salt to taste
- 10 oz baby red potatoes, halved or quartered
Miso Pork Pot Roast

Rub grated garlic all over pork butt then cover with flour
- Pork Roast:
- 4 lbs. pork butt
- Head of fresh Garlic, grated (not minced or chopped)
- 1 1/2 cups water
- 1/2 cup flour
- 1/2 cup sherry wine
- 2 tbsp. oil
- Sauce:
- 2/3 cups shoyu
- 1/2 cup miso
- 1 1/4 cup sugar
- 1 cup water
- 1 tsp. ginger, grated
SHORT RIB STEW

Mix the flour with the seasoned salt (I used Johnny’s but any brand will do)
- 4 pounds short ribs, cut into 2” pieces through the bone
- 1/3 cup flour
- 1/4 cup oil
- 1 tsp. seasoned salt
- 1 large onion, diced small
- 2 stalks celery, diced small
- 2 cloves garlic, minced
- 1 14oz. can Italian stewed tomatoes
- 1 8oz. can tomato sauce
- 22 oz. water, use the cans to measure
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. pepper
- 4 carrots, chunked into bite size pieces
- 4 red potatoes, chunked into bite size pieces
Sweet Ginger Pork

1. Place pork chops on bottom of 6-quart slow cooker
- 6 boneless pork chops
- 1/4 cup brown sugar
- 1/4 cup tomato sauce
- 1/4 cup soy sauce
- 4 tablespoons honey
- 1 tablespoon vinegar
- 1 tsp ground ginger
- 2 cloves crushed garlic
- 1 teaspoon salt
- 1 teaspoon pepper
