Mini Chili Cheese Dogs

Preheat oven to 375°F. Spray 9-inch square casserole dish with cooking spray
- 2 cups homemade chili, heated
- 1 can crescent roll dough
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella
- 1/2 cup chopped Maui onion (optional)
- 4 all-beef hot dogs, cut in half to make 8 mini hot dogs
- 1 tablespoon butter, melted
- 1 tablespoon grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon parsley flakes

In medium pot bring water, butter, and chicken stock to a boil
- 6 cups frozen green beans
- 1 small russet potato peeled and cubed
- 1 1/2 cup of water
- 5 tablespoons chicken stock
- 4 tablespoons butter
- 1 1/3 teaspoon granulated garlic
- 2 tablespoons chopped onions
- 1/2 teaspoon crushed red pepper
- 4 tablespoons sugar
- salt and pepper to taste
Pesto Lasagna Rolls

1. Cook noodles according to package directions
- 12 uncooked lasagna noodles
- 26-oz. jar your favorite pasta sauce, divided
- 2 cloves garlic, minced
- 24 oz. ricotta cheese
- 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
- 3 1/2-oz. jar prepared pesto
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup shredded mozzarella cheese
Cilantro-Lime Chicken

Make marinade: Whisk together 2 tablespoons olive oil, cilantro, lime juice, red pepper flakes, garlic, and cumin
- 4 bone-in, skin-on chicken thighs

- 2 cups crispy rice cereal
- 1/2 cup grated Parmesan cheese
- 1 envelope (1 oz.) ranch salad dressing mix
- 2 egg whites, beaten
- 8 skinless, boneless chicken thighs (about 5 oz. each)

1. In a small bowl whisk the tomato paste with 2 tablespoons water until smooth
- Dressing:
- 1 tablespoon tomato paste
- 2 tablespoons balsamic vinegar

- 1/8 teaspoon each, salt and pepper

- 4 generous cups chopped romaine lettuce
